Fatty, porky, and full of flavor, pork belly burnt ends are one of the best bites in bbq. They are pretty easy to make and come out delicious every time. These are my go to every time I want to impress my friends and hope you’ll love them just as much as I do.

Making the pork belly burnt ends

To start I like to cube up my pork belly into 1×1 squares.

Some people will smoke the pork belly whole then cube them up at the end, but by cubing first, you can season all sides giving you a better flavor and bark around all sides.

Use a sweet bbq rub like Honey Hog from Meat Church or try my homemade bbq seasoning and season each side of the pork belly. Then preheat your smoker to 250° F and smoke with pecan wood. I’ve cooked pork belly on my Big Green Egg and my Camp Chef woodwind and both produce delicious results.

Place each seasoned cube of pork belly onto your smoker and smoke for 3-4 hours at 250° F degrees until the bark has set and the internal temp of each pork belly cube is around 190°F.This generally takes 2-3 hours.

Place the cubes of pork belly into a foil pan with butter, brown sugar, honey and your favorite bbq sauce to make a sticky, sweet glaze.

Cover with foil and place back into your smoker until the pork belly is squishy and is an internal temp of 205°F.Use an instant read thermometer to make sure.

Remove the foil pan from the smoker and serve the pork belly on top of some butcher paper and watch them get devoured in no time!

Ingredients

  • 5 lb slab of porkbelly
  • 2 tablespoons of bbq seasoning
  • 1/2 stick of unsalted butter
  • 1/4 cup of light brown sugar
  • 1/4 cup of honey
  • 1/4 cup of BBQ Sauce

Instructions

  1. Cut your pork belly into 1 inch cubes
  2. Season all sides of the pork belly with a sweet bbq rub. I like my homemade bbq seasoning but use what you like!
  3. Set your smoker at 250°F and place your pork belly directly on the grill grates
  4. Smoke pork belly for up to 4 hours
  5. Remove the pork belly once the internal temperature has reached 190 degrees
  6. Place pork belly into a foil pan and add pats of butter, honey, brown sugar and bbq sauce. Stir together.
  7. Cover foil pan and place it back into your smoker until the pork belly reaches 205°F internal
  8. Remove pork belly from smoker, serve on some butcher paper and enjoy!
