It’s cold outside and that means it’s soup weather. Today I made a really tasty keto vegetable and sausage soup that was simple and healthy too.

Ingredients I Used.

This soup is very much like my wedding soup in flavor. The ingredients I used were breakfast sausage, cabbage, spinach, celery, carrots, Better than Bouillon, ginger, garlic and my secret ingredient Parmesan cheese.

While I always use Better than Bouillon in my soups because it adds so much flavor, you can use regular bouillon or chicken broth. However this product really adds a lot of flavor. I keep the chicken and beef flavors on hand all the time.

The other ingredients that really added the flavor were fresh ginger, fresh garlic and fresh Parmesan. The ginger might seem strange but it really went nicely with the other ingredients. It’s also very warming in the soup.

Let’s Make This keto Vegetable Sausage Soup!

  1. Pour a tablespoon of oil to a large soup pot and heat up the pan.
  2. Add the sausage and cook until it browns a bit then add the crushed garlic and ginger. Mix and saute for a minute.
  3. Now add the rest of the ingredients (cabbage, spinach, celery, carrots, water, Better than Bouillon and Parmesan cheese).
  4. Bring to a boil then let it simmer for 10 minutes until the vegetables have softened.
  5. Serve with a Sprinkling of parmesan cheese on top if you wish.

About The Low Carb Vegetables And Sausages I Used.

I chose the low carb vegetables for this soup (cabbage, spinach and celery) for their low carb count but all the their flavor. While carrots are a little higher in carbs, in this small amount they are worth it for the color and taste.

The sausage I used was breakfast sausage you get in a roll. You could also use Italian sausage links or kielbasa. However the carb counts for each vary by brand. Here’s the carbs in sausage and kielbasa for a few brands that I found on my Loseit app.

  • Bob Evans Breakfast Sausage Roll – 1 oz has 0g net carbs
  • Uncle Charleys Sweet Italian Sausage – 1 link has 2g net carbs
  • Hillshire Farms Polska Kielbasa – 1 oz has 1g net carbs

I made a big pot of this low carb soup and have eaten it for breakfast, lunch and dinner. This recipe makes roughly 8 (1 cup) servings. It’s a good soup to freeze in containers for a keto lunch.

This low carb vegetable & sausage soup is the perfect dish for a cold day. Full of healthy ingredients and spicy sausage to make a flavorful soup with only 3.7g net carbs per serving.

Ingredients

  • 8 oz sausage in a roll (I used Bob Evans breakfast)
  • 1 teaspoon garlic, crushed
  • 1 teaspoon grated ginger root, crushed (or paste)
  • 2 cups baby spinach, chopped
  • 1 tablespoon Better than Bouillon chicken flavored
  • ½ cup carrot, diced
  • 2 cups cabbage, chopped
  • ½ cup celery diced including leaves
  • 6 cups water
  • 4 oz. fresh grated Parmesan cheese

Instructions

  1. In a soup pot, start browning the sausage for a few minutes.
  2. When the sausage is losing it's pinkness, add the garlic and ginger and saute for a minute.
  3. Next dissolve the Better than Bouillon in with a bit of the 6 cups of water.
  4. Add that and the rest of the ingredients to the pot and stir to mix well.
  5. Simmer for about 10 minutes until vegetables are soft.
  6. Top with fresh grated Parmesan cheese (about 1 tablespoon).

    This was inspiring! I had one leftover hot sausage link in the fridge just begging to be made into some kind of soup, so I down-scaled your recipe a bit . I also threw in a little leftover bacon I also had in the fridge (not sure how I had leftover bacon – that never happens!) . Since my meats were already cooked I started with about a Tbs. of butter and gave the veggies a little saute, then added in the meats, threw the spinach and cabbage on top for a minute or two to wilt a bit, then added the broth to meld everything together. A sprinkle of parm on top, and YUM! Thanks for this one – can’t wait to try some of the others.
