Hi Michele, I'm sorry to hear your brownies didn't turn out as you were expecting them. The only thing that comes to mind tight now is maybe you baked them longer. I'd be more than happy to help you figuring out what when wrong. Please don't hesitate to email me your questions. Roxana

FAQs

Can I use milk instead of water in brownie mix? ›

One change is to use milk or heavy cream instead of water. This change will make brownies more moist and gooey since milk is more fatty and flavorful than water. A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter.

How to make brownie mix more chewy? ›

The path to brownies with a fudgy, chewy center — so dense their crumb becomes fine enough to almost (but not quite) disappear — is the combination of melted butter and sugar. Cookbook author Jesse Szewczyk details the science behind using melted (rather than solid) butter in cookies in the secret to fudgier cookies.

What to add to brownie mix? ›

You're free to add any extras you'd like to the batter. Perhaps a few handfuls or nuts – my favorite being pecans, almond, or walnuts. A teaspoon of instant espresso powder will deepen the chocolate flavor of the batter. A splash of vanilla extract extract is always nice, too!

How to make brownies less cakey? ›

Achieving a fudgy brownie is all to do with the ratio of fat to flour. A fudgy brownie recipe will use more fat than flour. Generally this is achieved by adding more butter or real chocolate to your brownie recipe. A cakey brownie recipe on the other hand will call for more flour in the ratio of fat to flour.

Is it better to make brownies with butter or oil? ›

Butter adds richness, while oil ensures a gooey, moist center. Neutral oil like avocado oil is great, or use a light and fruity olive oil for some extra flavor. Sugar: For the best of both worlds (gooey centers, chewy edges, and a touch of crispness), we highly recommend using granulated and brown sugar in this recipe.

What happens if I add an extra egg to brownie mix? ›

If you want to get a little more creative with your brownie mix hacks, add an extra egg to the batter. The extra protein will help thicken up the batter and make it fluffier, creating a more decadent, fudgy texture. You can also add the yolk by itself in addition to the 2 eggs a box brownie mix typically calls for.

What makes brownies fudgy vs cakey? ›

Fudgy brownies have a higher fat-to-flour ratio than cakey ones. So add more fat—in this case, butter and chocolate. A cakey batch has more flour and relies on baking powder for leavening. The amount of sugar and eggs does not change whether you're going fudgy or cakey.

How to doctor up box brownies? ›

Add nuts – Add a handful of finely chopped pecans or walnuts if you love brownies with nuts. Add mix ins – Jazz up a basic brownie mix with chopped mini peanut butter cups, white chocolate chunks, or your favorite chopped up candy bar. Add a swirl – Swirl in spoonfuls of peanut butter or Nutella before baking.

How do you firm up gooey brownies? ›

Solution: if you still think they're too soft once cooled, cook them for a few minutes longer next time. But first, pop them in the fridge overnight and have a bit of faith.

How do you jazz up a box of brownies? ›

Add a teaspoon of instant coffee or espresso powder. Throw in a handful of nuts—pecans, walnuts, macadamia, whatever you have on hand. Scoop in a palmful of dried or frozen fruit. Add an extra splash of the top-shelf vanilla extract, or a dab of vanilla paste, or a dash of vanilla powder, to the batter.

What does adding coffee to brownie mix do? ›

Adding coffee to your brownies boosts their flavor because its bitter quality balances out sweetness, making it less overpowering. It allows that delicious chocolate flavor to really shine. You can also switch out the water called for in the batter with brewed coffee.

Should you chill brownie mix before baking? ›

Recently, as I was reading through the comments on all our brownie recipes, one suggestion in particular stood out: Refrigerate the batter overnight for a richer, chewier brownie.

What does melted butter do to brownies? ›

The reason we melt butter in brownie recipes instead of beating room temperature butter with sugar is because that helps give a rich, chewy, fudgy texture. Beating butter incorporates air and gives a more light, airy, cakey texture, which we don't want in a brownie. Well, you might want that, but I don't!

Is melted butter better than softened butter for brownies? ›

If you want a fudgy chocolate brownie, use melted butter. For cakey brownies, beating softened butter and sugar together to create air pockets will make your brownies lighter and cakier.

Should brownies still be wet in the middle? ›

If the brownies still look wet or aren't pulling away, they aren't done. Even fudgy brownies will pull from the edges once they've finished baking. You'll see that the edges look dry while the middle still looks soft or slightly wet. Chewy and cakey brownies will have dry edges with firmer-looking centers.

What happens if you use milk instead of water in baking? ›

Yes, you may make cakes with milk instead of water. Because fat provides richness and solidity to the cake, milk can increase the cake's moisture content and flavor. 1) Use the same quantity of milk as water called for in the recipe.

What happens if you substitute milk for water in a cake mix? ›

Baking tip #2: adding milk to your box cake mix in place of water adds a dense texture to your dessert leaving it moist and flavorful like a homemade cake. Or, if you prefer, you can add buttermilk, giving your cake a tangy flavor to balance out the sweetness.

Can I use milk instead of water for Duncan Hines brownies? ›

Duncan Hines Mug Cake with Frosting, Brownie, 4 Count

Upload complete! A: Sure! Milk will make it moister/denser due to the fat content.

Can you use milk instead of egg in brownies? ›

You can use 4 tablespoons of milk, ¼ cup of mashed banana or ¼ cup of unsweetened apple sauce in place of each egg required in a box brownie mix.
